Known as the national hangover soup of Korea, haejanguk or 해장국 is filled with vegetables, meat, and spices that are supposed to snap you out of whatever you drank last night. I don’t drink to my death every night, but I do enjoy this soup. Around the corner from where I live is a great little restaurant that serves up this meal anytime of the day. One serving is only 7,000won and it comes with the typical side dishes you would see at any Korean restaurant.
The meat in this soup is super tender and is typically cooked for 2 days with soju. Soju is supposed to make the meat tender and give it an extra boost of flavor. The rest of the soup consists of kimchi, bean sprouts, and other mysterious leaves which I do not know the name of. You can also order a bowl of rice to make it a full meal. Another dish you can have at this restaurant is kamjatang (감장탕). It’s similar except it has potatoes, spine meat, and sesame leaves. I cannot stand the smell and taste of sesame leaves so I never eat that.
